Glutathione S-transferases (GSTs) are a group of enzymes that play a critical role in the detoxification of xenobiotics and endogenous compounds. They facilitate the conjugation of glutathione, a tripeptide that acts as a natural antioxidant, to various substrates, thereby making them more water-soluble and easier to eliminate from the body.
